A dense, moist sponge contrasting with the tartness of fresh apricots.
To serve 2
2oz soft butter or margarine
1oz vanilla sugar
1oz caster sugar
1oz gluten-free (or normal) plain flour
1oz gluten-free (or normal) self-raising flour
Grease a loose-bottomed individual flan dish. Cream together the butter and sugar until light and fluffy, then beat in the egg. Add the flour and mix in gently. Put into the flan dish. Cut 2 of the apricots into quarters, and the third into halves and one half in half again. Arrange on top of the sponge mix. Bake in the oven at 160C for 30 - 40 mins until golden brown. Serve with cream or vanilla ice cream.
