  • 3 artichokes
  • 1 purple onion
  • 1 garlic clove
  • 1 cup red wine
  • 1/2 cup white yoghurt
  • 1/4 pack philladelphia cheese
  • 2 teaspoon sugar
  • Integral taco tortillas
  • Cheese
  • Olives
First chop the onion in very thin slices and put it in the frying pan with oil untill they become transparent and pink.
Meanwhile you can take all the flesh from the artichokes and save it for later.
Back to the onions, once they are ready, add the wine, salt and cook very slowly untill the alcohol is gone.
Then add the artichokes and continue cooking for a couple of minutes and turn off.
Put the philly cheese into the microwave for 30 seconds or untill it melts. Add the yoghurt and mix gently.
Add the yoghurt mix into the artichokes and onion. You can add some spices, personally I put garlic, oregano, mustard seeds and olive oil in the mortar (or mixer) and added it to the pan.
Place a tortilla (I used integral flour tortillas) into a mould (can be a ceramic bowl or something like that, according to the size of the tortilla, oven save) and pour the artichoke&onion mix into it.
I put 4 olives in the center and adeed little crispy pieces of bacon, but that is entirely optional.
And the last step, stripes of cheese and into the oven to gratinate.

Looks fancy but it's a really easy and quick way to make a great dinner and a different use for tortillas.

Method
