Artichoke with broccoli, mushrooms ,herbs and octopus salad

Easy, tasty and healthy salad

Ingredients
2 serves

6 artichokes only the \"head\"(chopped in 4 pieces)

100 grms broccoli(lightly boiled 5 minutes)

50 grms parsley(chopped)

50 grms dill(chopped)

50 grms rocket(chopped)

160 grms cooked in steam octopus

150 grms mushrooms(baked in the oven and seasoned)

1 tea sp sea salt

pomegranate seeds(to give color)

for the sauce

6 table sp olive oil

juice of one medium lemon

1 table sp vinegar

1/2 tea sp mustard

1/2 tea sp salt

1/2 tea sp sugar

1/6 tea sp pepper

30 grms thyme

4 leaves of basil(chopped)





Method
Boil the\" heads\" of the artichokes in a casserole with water ,lemon juice and salt,for 4 minutes (add the artichokes when the water is boiling).
Drain the artichokes and keep them aside.
Boil in salty water the broccoli twigs, for no more 5 minutes. Drain them and keep them aside.
Chop the herbs(parsley,dill and rocket) in medium to small pieces and keep them aside.
Boil the octopus in a steamer or in a casserole for 30 minutes and keep a portion for the salad.Cut in small pieces the parts octopus you need.
Bake the mushrooms for 5-10 minutes or longer (depends on how crunchy you like them) as i have done in the previous post, with oregano,basil salt and dry basil ,using hot air....
Use a deep plate and start making the salad. Set the pieces of the artichoke first,on the plate ,then the herbs,then broccoli, mushrooms and in the end the octopus.You can now lightly salt the salad ,and mix it using your hands gently. Now add the sauce.In the end you could add pomegranate seeds to make the salad more fancy
PS:Before you add the sauce you must mix its ingredients well, by using a spoon. Keep mixing the liquid for about 5 minutes till the sauce thicken.....
