Asian Turkeyloaf with Spicey Tomato Sambal

Low fat packed full of taste of Asia, served with a stapel of Indonesian tables Tomato Sambal(like a salsa). I served mine with garlic/ginger mashed potatoes, but it goes well iwth yellow rice also. This is also Gluten/Dairy/Soy Free.

Ingredients
Serves 4
1LB ground turkey
½ cup crisped rice crumbs
½ tsp salt
¼ tsp black pepper
1tsp garlic powder (optional)
¼ cup chopped parsley
¼ cup chopped mint’
¼ cup chopped basil
2TB lime juice
½ tsp sriracha

Tomato Sambal
1 large tomato, seeded and diced into peice (2 cups)
1 TB fresh lime juice
1 tsp salt
1/2 tsp cayenne pepper
2 shallots, minced
2 tsp braggs liquid aminos
2 small chili peppers seeded and minced(optional)

Method
Preheat oven to 350°

Combine rice and dry spices in food processor until smooth and crumb like. In a large bowl combine crumb mixture with ground turkey. Add lime juice, sriracha, and chopped herbs mix well. Place in oiled loaf pan. Bake for 25-30 minutes.
* I sometimes use large cupcake tins and serve 2 per person.

Sambal:
Place all ingredients in bowl and mix well. Let stand for up to a week in the refrigerator.
