Place apples and water in a pan and simmer for about 20 minutes, until tender and smooshy. Then use a hand mixer to puree to desired consistency, adding more water if needed (surely a food processor would work well, but I haven't tried it). Now it's time to add the honey. I'd taste the applesauce, first, as you may decide the honey isn't necessary. Add honey, if desired, and stir. Store in fridge and serve chilled. You can also sprinkle with cinnamon :)
