  • 8 Baby Roma Tomatoes crushed
  • 2 boiled eggs
  • 2-3 medium Russet Potatoes
  • 2 Shallots sliced
  • 3 cloves of garlic
  • 1 tsp of cumin seeds
  • 1/2 tsp of cayenne pepper
  • 1/4 tsp of turmeric
  • salt & pepper to taste
  • 1 tbsp extra virgin olive oil
  • 1 tsp tomato paste
  • Cilantro for garnish
Heat up a pan and add olive oil. Boil eggs until hard boiled in a separate pot. Saute cumin seeds & minced garlic & thinly sliced shallots. Add the peeled and cut up potatoes and saute for few minutes. In a Cuisinart crush the fresh baby Roma tomatoes. Add them to the pan and let the curry simmer on medium low heat for 20 – 30 minutes, until the potatoes are tender. Now add the tomato paste and saute for few minutes. Add the cilantro at this point. You can add eggs once you are ready to eat on top of the tomato curry and serve hot with Naan or steamed rice. A great Meatless Monday dish to start your week!

Tomato Curry with Potatoes & Boiled Eggs was inspired by an Indian neighbors of my parents who are vegeterians. I have thought about becoming a vegetarian for the longest time but have not been successful. The longest I have gone without any kind of meat products was about for 2 weeks and that was a tough task for me. I have grown up like most people where a meat protein is the main attraction of the meal and veggies are just the side-kicks or extras. Today anyone who is interested in food and the environment knows that it is very hard to ignore the evidence mounting against factory farmed meat. I read a great article recently in a whole living magazine This article talked about The Meatless Monday Movement, an initiative in association with the Bloomberg Johns Hopkins School of Public Health, states that if all Americans skipped their daily eight ounce of meat one day of the week, it would be a start to a healthy lifestyle. Of course there are many health benefits to a plant based diet which translates to a healthy weight loss, less incidents of heart disease, diabetes and cancers. And last but not least a study shows that vegetarians live longer than meat- eaters. I will be posting a Meatless Monday recipe every Monday. So let us start our journey together towards a new and healthy lifestyle!
