roast lamb or kid is a delight to be served by Easter...
2 back kid thigh
1 tbsp butter
rosemary & sage
5-6 carrot, sliced
2 leek, sliced
6 cloves of garlic
1 glass white wine
white potatoes, sliced
sea salt & fresh ground white pepper
extra virgin olive oil
Mix butter with rosemary, sage, cayenne pepper. then insert grease kid thigh. Season with sea salt and freshly ground white pepper. Put all in plastic bag then add white wine. Let to marinade about 12 hours.
Heat oven at 200\'C.
Wrap the meat, carrots, leeks, garlic and white wine in aluminum foil. Baked on oven about 1h45\'. The meat will be very tender.
Heat a large pan with olive oil. Add potatoes, fresh rosemary and 1-2 cloves garlic. Fried for 1-2 minutes. Season with sea salt and freshly ground white pepper then baked on oven until is brown.
Served your meat with potatoes, veggies and a glass white wine.
