Baked potato with feta and pomegranate

When it comes to endurance events the key is plenty of carbohydrate in the diet. Carbohydrate is the fuel your muscles use while you are exercising but stores in the body are small, so a regular intake of carbohydrate-rich foods is necessary to keep them topped up. Low stores will result in poor performance and increase the risk of injury. Baked potatoes are a perfect choice as they provide plenty of starchy carbohydrate. The feta and pomegranate filling is easy to digest and the fruit provides additional carbs.
1 Bannisters’ Farm Ready Baked Potato
50g feta cheese, diced
1 tbsp• lemon juice
Seeds from a pomegranate
25g dried apricot pieces
¼ cucumber, diced
6 black pitted olives, halved
1 spring onion, chopped
6 cherry tomatoes, halved
Handful of parsley, chopped
Mix all the filling ingredients in a bowl, and serve on the baked potato.
