Ingredients
Fried Duck :
1 (900 g) duck, cut into 4 pieces
4 tablespoons, vegetable oil
2 bay leaves
2 lime leaves
1 lemongrass, bruised it.
Spices, mashed and mixed :
2 cm fresh ginger
2 cm lesser galangal
2 cm galangal
8 slices garlic
1 teaspoon fried shrimp paste
1/2 teaspoon corriander
1 teaspoon ground pepper
1 teaspoon sugar
2 teaspoons salt
Sambal Matah* ( Bali's chutney )
3 tablespoons vegetable oil
1 teaspoon shrimp paste
3 slices shallot, sliced thin
2 slices garlic, sliced thin
3 pcs red chili, sliced thin
2 lime leaves, sliced thin
1 lemongrass, pick only the white part, sliced thin
1/2 teaspoon salt
1 lime, squeeze the water.
additional : half boiled beans
Method
[b]Fried Duck :[/b]
# Mixed the duck with the spices and leaves it for a couple hours.
# Put the spices duck into a hot oil along with the bayleaves, limeleaves, and lemongrass.
# Fry it until the color is change to gold, pour enough water, cook it with a med heat till the duck is tender. Take and leave till it a lil bit warm.
# Fry it once again till it crisp.
# Serves it with sambal matah and beans.
[b][i]Sambal Matah[/i] :[/b]
# Fry the shrimp paste for a few seconds. Pick it up.
# Mix it with another ingredients.
# pour a lime water. Mix it.
# Ready to served with the duck.
