Ingredients
2 cups all-purpose flour
1/2 cup sugar
3 tsp baking powder
1/2 tsp baking soda
1/2 tsp salt
1/2 cup chocolate chips (finely chopped)
1 egg (beaten)
3/4 cup milk
1/4 cup vegetable oil
2 cups mashed ripe bananas
Method
Sift together all dry ingredients. Combine liquid ingredients, including melted fat or vegetable oil. Add liquids to dry ingredients and mix just until all flour is moistened (approx 10 seconds). The batter will look lumpy. Do not over mix. Pour batter in loaf pan and bake immediately. Bake at 350 degrees F for 65-70 minutes or until a toothpick inserted into the centre of the cake comes out clean. Serve with a good cup of steeped tea or a glass of cold fresh cow’s milk.
Tips:
You can use a variation of nuts, chocolate or butterscotch chips.
