Banana Cake Downunder

This is a very simple old hand-me-down recipe from my mother. Super way of using up bananas that have ripened too much. Sometimes I toss in some chopped walnuts for texture. Also 1 tsp dried ground Ginger and Cinnamon is a nice addition. On another occasion a different flavour can be achieved by adding 1 tsp vanilla, that is instead of adding Ginger and Cinnamon.

Ingredients
125 g Butter
175 g Sugar
2 Free Range eggs
225 g Flour
2 Mashed overripe bananas
1 tsp Bicarb Soda
2 tablespoons Boiling Milk
1 tsp Baking Powder

Method
Cream butter and sugar, add eggs and mashed bananas, then Bicarb Soda dissolved in boiling milk.
Lastly add flour and Baking Powder previously mixed.
Bake in two greased sandwich tins for 20 minutes @ 180C.
Once cooled, spread one cake with whipped cream and sliced bananas then top with the other cake. Finally sieve some icing sugar on top and serve.

Enjoy with a lovely cup of tea.
