Ingredients
# 2 Eggs
# 125 ml sparkling water
# 125 g flower (all purpose)
# pinch of salt
# 18 elderflower clusters
# vegetable oil (or if you want it extra yummy clarified butter or ghee)
this makes 6 Portions
Method
Just find an Elderflower shrub in full bloom and with a pair of scissors snip off the clusters
For the batter: separate the eggs and mix the yolks with the water and the flour to a smooth batter, beat the whites to snow with the salt and gently fold into the batter.
Heat the oil to frying temperature and after dipping the clusters into the batter you fry them golden, first with the stem pointing up and then finish them with the stem down. drain them on a paper towel like you would with anything fried and them dust with powder sugar and enjoy. also great with a bit of apple sauce for dipping.
