Bean Bread (no Kneading)

OK. The 1st step is to soak dry beans overnight.You should cover the beans by double the depth to allow for expansion. Place all dry ingredients in a bowl. Place the soaked beans in a sieve or collander and wash well. Place the beans in a blender and add the 300g water. Pulse until the beans are broken but not smoothe.(chunky is best) Add the mixture to the dry ingredients and mix with hands until a dough is formed.

Ingredients
400g Flour
1 Packet yeast
2 teaspoon Salt
4 teaspoon Salt
140g Dried Beans (any)(35% of flour)
300g Water (75% of flour and beans)
Olive oil

Method
Let the dough stand for at least 10 minutes.
Using your knuckles, spread the dough on an oiled table into a rectangle about 400 X 600mm. Fold the top half to the centre of the dough and repeat with the bottom half as well as the sides.Place the dough into a floured basket or bowl and leave in a cool place for 45 to 60 minutes. Again repeat the spreading and folding process on an oiled surface 3 more times with 45 to 60 minute intervals.after the third folding of the dough let it rise on a baking tray sprinkled with flour for 45 to 60 minutes and bake in a pre-heated oven at 180c for 40 minutes.
