OK. The 1st step is to soak dry beans overnight. You should cover the beans by double the depth to allow for expansion. Place all dry ingredients in a bowl. Place the soaked beans in a sieve or collander and wash well. Place the beans in a blender and add the 300g water. Pulse until the beans are broken but not smoothe.(chunky is best) Add the mixture to the dry ingredients and mix with hands until a dough is formed.
Ingredients
400g Flour
1 Packet yeast
2 teaspoon Salt
4 teaspoon Salt
140g Dried Beans (any)(35% of flour)
300g Water (75% of flour and beans)
Olive oil
Method
Let the dough stand for at least 10 minutes.
Using your knuckles, spread the dough on an oiled table into a rectangle about 400 X 600mm. Fold the top half to the centre of the dough and repeat with the bottom half as well as the sides.Place the dough into a floured basket or bowl and leave in a cool place for 45 to 60 minutes. Again repeat the spreading and folding process on an oiled surface 3 more times with 45 to 60 minute intervals.after the third folding of the dough let it rise on a baking tray sprinkled with flour for 45 to 60 minutes and bake in a pre-heated oven at 180c for 40 minutes.
