The best piece of beef in a balsamico cream with carrot and potato
beef filet mignon
balsamico vinegar (+500ml)
white wine vinegar
potato (type A)
Reduce balsamico until creamish, add knob(s) of butter and white wine vinegar to taste.
Boil potato and glace one or two (baby) carrots.
Plate(white china): pour pleanty balsamico cream on plate, place beef, potato and carrot(s).
