Beef and Tomato Curry with Fava Beans served with Basmati Rice

Ingredients
500g Diced Beef
1 Onion Diced
1 Cup Fava Beans
1 tbs Mild Curry
1 tbs Garam Masala
2 tins Whole Tomato
1 ts Ground Fanugreek Seeds
3 Cloves of Garlic Thinly Sliced
1/2 cup Olive Oil
Salt and Pepper for taste
Corn Flour

Method
First thing to do is boil your Fava Beans in boiling Water for 1 hour and a half. You willl need to top up the water every 20 minutes with kettle water.
While the beans are cooking place into a bowl your beef and mix in your Curry and Garam Masala. Mix it in well and then add half cup of Olive Oil. Mix again to make sure the flavours are covering your beef cubes. Season with salt and pepper; mix one last time then cover and leave in fridge for an hour.

When Fava beans are cooked enough for you to take the skin off, empty the water in a container as you will use it for the sauce later on. Cool down your beans with cold water so that you can peel each one. Place the inside of the beans into your beef mix and stir till all have been peeled.

Then turn your wok on with olive oil. when the wok is hot place your beef and fava beans inside the wok. cook for about 10 minutes or till the beef is cooked. threw in your garlic and onions and coock till they are soft. Put your two tines of whole tomato in and stir. Cover and then cook fro 20 minutes on a medium heat sturing every 5 minutes.

Mix quarter of a cup of water with cornflour till smooth. Put mixture into wok and stur till sauce thickens.

Serve with Balsamic rice and Roti bread.
