Beef claf with eggplant and rocket salad

200 g beef calf
red and black fresh pepper
onion, finely chopped
rosemary finely chopped
1/2 lemon juice
extravirgin oliva oil
Preheat oven at 180\'C.
Bake eggplant until you can easy to peel the skin, then finely chopped, add onion and season with salt and black pepper.
Make a mix from red and black fresh pepper, thyme, rosemary, salt and then season all the beef side with this mix. Sprinkle with extravirgin oliva oil.
Heat a saucepan with oliva oil and cook beef at 2 minutes on each side, then add on oven for 10 minutes.
Let the beef to rest, then finely sliced.
Rocket salad season with lemon juice and extravirgin oliva oil.
Serve the beef\'s calf with eggplant, roket salad, cherry tomatoes and sliced of roasted bread.
