1 kgr calf or beef
8 tiny potatoes
150 grms peas(fresh or frozen)
½ cup of virgin olive oil
1 tea sp of fine quality butter
3 large tomatoes
2 carrots chopped in slices
1 big dry onion chopped
A handful of thyme
2 cloves of garlic(just press them before you use it, don’t chop them)
Black pepper seeds
1 tea sp sugar
1 ½ tea sp salt
Mint for decoration
Boil the meat in salted water. I suggest you, to throw the water after 10 minutes of boiling. Then put the meat in a casserole(you may use steamer ) with 4 glasses of water and cook it for 40 minutes.
When you finish boiling set the meat aside and keep the broth.
Chop the tomatoes and put them in a blender. Use the blender gently and make a soft and smooth sauce with the tomatoes.
Put the onion and the carrots (you can chop them in any shape you want) in a deep casserole together with the olive oil and heat them gently. Saute them for 5 minutes and then add the tomatoes. Add thyme, sugar and salt and pepper seeds.
Cook for 10 minutes till tomato sauce dry its liquids and then add the meat and 2 glasses of broth.
Set the fire in a very slow mode and cook slowly for another 30 minutes .
Now use another utensil to cook the potatoes and the peas.
Add a portion of the broth you kept aside(2 glasses) and boil the peas and the potatoes for 15 minutes (usually the tiny potatoes are easy to be cooked)….. Then set them aside .
Heat 2 table sps of olive oil and a tea sp of butter . Add garlic(pressed not chopped) and heat well.
Add salt and sugar and peas and potatoes…..Sauté them for 5 minutes and your dish will be ready…..Serve them in a large plate, adding a portion of tomato sauce you like…Decorate with chopped mint….Enjoy!!!
