Beet and Goat Cheese Salad

Ingredients
7 medium size Beets (peeled)
1/4 small Red Onion
2 Carrots (sliced into very thin strips – “Julienne”)
1/2 cup Unsalted Walnuts
3 tablespoons of Goat Cheese
2 tablespoons Balsamic Vinaigrette
2-3 tablespoons Honey (depends how sweet you want it)
1/2 cup Fresh Parsley (finely chopped)
4 cups of Mixed Greens or Spinach (optional)

Method
Cook beets in boiling water for about 20-30 minutes (you want them to be soft but still have a “bite” to it). Cut the Beets into small cubes (check out the picture to get an idea ) and set aside. Slice onions into very thin rings and set aside.

In a small bowl add the honey, balsamic vinaigrette, and 1 tablespoon of goat cheese and mix well for about 1 minute (until the cheese practically dissolves).

Place the greens, beets, carrots, and onions in a salad bowl, crush the walnuts roughly and spread on top, do the same thing with the goat cheese. Pour the sauce on top and mix well, sprinkle the parsley and serve.
