Ingredients
1 c of walnuts
1# trimmed roasted beets cut into large chunks
1/2 c of olive oil
1/4 c water
2 Tbl of tahini
1 to 2 Tbl lemon juice
Kosher salt
Method
Pulse walnuts in food pro until coarsely chopped. Add the beets and pulse until rough paste. Add olive oil, water, and tahini and pulse, just to combine. Add lemon juice and salt to taste.
Serve with toasted pita points
