Serve cold on meat sandwiches 30min preparation time, 30 min cooking time, serves 8
1 tablespoon oil
1 large onion, chopped
500g beetroot, peeled and grated
3 tablespoons dark brown soft sugar
4 tablespoons distilled malt vinegar
1 garlic clove
1/4 teaspoon coriander seeds
1/4 teaspoons caraway seeds
25g ginger, fine chopped
1. Heat oil in a frying pan.
2. Sweat onions, add beetroot and cook for 5 minutes.
3. Add garlic, ginger, sugar, vinegar, coriander seeds, caraway seeds and water.
4. Bring to the boil and simmer uncovered for 30 minutes or till most of the liquid has evaporated and the ingredients are soft.
5. Fill jars and label
