Beetroot lunch salad

In spring you need more iron, D- and C-vitamin and some good fats. It is a nice dry vinaigrette- type salad fit for a lunchbox and even if you feel like not eating it won´t go bad lying in the bag the whole day, cause it has no dairy stuff in it. Put it back in the fridge and eat it for a snack later like I do.

Ingredients
2 small boiled beetroots
2 boiled potatoes
1 boiled carrot
1/2 green apple + 1/2 tsp grapefruit juice
1,5 tsp apple cider vinegar
1,5 tsp oil
1 tsp sugar
1/2 tsp salt
1/4 tsp black pepper
1/2 tsp whole cumin seeds
1/2 tsp dried thyme

Method
Cut the beetroots, carrots and potatoes into cubes. Cut or shred the apple, add some grapefruit or lemon juice so it won´t turn brown. Mix all the sauce ingredients, pour over the salad. keep in a cool place before taking it with you for lunch. eat with sardines or cucumber sandwitches.
