The orange juice sweetens and softens the beetroot and the marinate sauce makes a fantastic dressing ! This salad is wonderfully refreshing !

Ingredients
3 beetroots
6 oranges
4 cups baby spinach
1 cup rocket
2 cucumbers

Method
Juice the 6 oranges and peel and slice the beetroots .

Pour the juice from the 6 oranges over the sliced beetroots and allow to marinate for at least 45 minutes .

Chop the spinach and rocket and dice the cucumbers in a large salad bowl .

Pour the marinated beetroots and orange juice over the salad and serve .
