An elegant, chewy, delicious brownie with white chocolate chunks.
Ingredients
1 cup sugar
1/2 cup shortening or butter, room temp
1 teaspoon vanilla
2 large eggs
2/3 cup all-purpose flour
1/2 cup cocoa
1/2 teaspoon baking powder
1/4 teaspoon salt
1 cup (or a 100g bar) roughly chopped white chocolate
optional: 1/3 cup chopped hazelnuts
Method
Heat oven to 350°F (180°C)
Grease a square pan, 9x9x2 inches
Mix sugar, shortening/butter, vanilla and eggs with an electric mixer until smooth.
Stir in the remaining ingredients except white chocolate chunks with a wooden spoon/rubber spatula. Spread batter into pan, then sprinkle chocolate on top and press lightly with your flat palm.
Bake 20 minutes, then allow to cool completely in pan before cutting into squares.
