A very economic cake from the time of St Petersburg block, when people did not have many eggs, no butter nor flavorings, but they had tea and self made jam.
Ingredients
3 dl very strong black tea
1 egg
3 tbsp oil
3 tbsp thick forest berry jam
1 tbsp sugar
3 dl flour
1 tsp baking powder
Method
1. brew some very strong tea, drain into a glass. melt sugar in the tea while it is hot.
2. mix flour with baking powder. drip in the oil and rub into the flour. add jam.
3. beat the egg into thick foam. mix with the cooled down tea. add that to the flour, try not to stir too heavily
4. grease a small deep cake tin, sprinkle manna on the bottom. pour in the dough, bake in 200C for 25 minutes.
