This recipe is courtesy of Mrs. Vidhu Mittal, from whom I learnt this salad.Though I have made a few variations of my own. This salad tastes best when chilled. While making the dressing you can increase the quantity of the sauces depending on spicy you want it. It serves as a very refreshing vegetarian salad to serve with a bbq or just like that. Black eyed Beans are easily available in any Indian grocery store.
A - Salad :
1 cup - black eyed bean (pressure cooked )
1 onion - finely chopped
1 carrot - grated
1 tomato - deseeded and finely chopped
B - Dressing :
2 cloves - garlic crushed
2 tbspn Olive oil
1 tbspn Brown vinegar
1 tbspn Worcestershire sauce
pinch of mustard powder
1/4 tspn oregano powder
1 tbspn red chilly sauce
1/2 tsp soya sauce
1 tspn lemon juice
1/2 tspn sugar
1/4 tspn dry basil powder
salt & peppar to taste
Pressure cook the black eyed bean, drain and cool.
Once it has come to room temprature add the remaining A list ingredients.
Refrigerate until required.
Combine B list ingredients and keep aside.
Chiil the salad, add dressing just before serving.
* Serving Tip - Serve on a lettuce bed.
