The thymes adds its delicate flavour to the plump and juicy berries
3 Tbs Water
Juice of 1 lemon
2 1/2 cups Sugar
2 thyme twigs
2,25 liters (9 cups) Fresh Blueberries
In a big pot, bring to a boil: sugar, lemon, thyme leaf and water. Once boiled and reached candy thermometer 120 C, add blueberries and bring to a gentle boil.
Remove from heat and empty blueberries on a long pan to cool, for an hour.
Once cooled put blueberries back into same pot and bring to another boil. Remove thyme twig and fill your mason jars.
