  • CRUST:
  • 180 ml (3/4 cup) Graham crackers
  • 125 ml (1/2 cup) Rolled Oats
  • 30 ml (2 tbsp) sugar
  • 75 ml (1/3 cup) Melted Butter
  • Cake:
  • 3 cups blueberries
  • 125 ml (1/2 cup) Maple syrup
  • 3 packs/ 250 g (8 oz) cream cheese, room temp
  • 180 ml (3/4 cup) sugar
  • 10 ml (2 tsp) vanilla
  • 5 eggs
  • 125 ml (1/2 cup) sour cream
PREHEAT OVEN 375 F
For Crust. In bowl mix up all crust ingredients and them press firmly in a 8" round spring pan. Bake in oven for 10 minutes.

In a food processer puree the blueberries and the maple syrup. Reserve.

With a mixer, beat to gether the cream cheese, sugar and vanialla. Once welll mixed add 1 egg at a time and then the sour cream.

Pour HALF the cream cheese mixture on top of crust. Now pour about 1/4 of the blueberry puree mixture (in a swirly design). Now again, pour the rest of the cream cheese mixture. For the last time pour 1/4 of the blueberry puree and use a pallet knife to give it a swirly effect.

Bake in oven for 1 hour and 15 minutes. Leave to cool completely. Use the rest of the blueberry puree to serve with cake.
