Borscht Beets

As there seems to be few creative dishes featuring beets I have developed this one using my cultural cooking background. From start to finish(including cutting time),this should take about 1/2 hour. If you must use canned beets, then the whole effort should be accomplished in approx. 15 min. The flavour of the dish is very borscht-like and indeed ,this can be made into a soup by adding some chicken or vegetable broth. The color of the dish is very pleasing , albeit unusual, on the plate-a medium pink color.An excellent addition to the vegetarian or vegan recipe box.

Ingredients
2 cups sliced or diced fresh beets(or whatever shape you want to cut them)
1/2 sliced or diced onions(no other shapes will do for this one)
1 tsp• sea salt(ok-if you must,regular salt) and a sprinkling of pepper
1 cup sour cream or yogurt(low fat varieties discouraged vehemently)
1/4 cup fresh or fresh frozen dill(dried dill doesn\'t cut it)
1 tablespoon oil of any type or butter
Optional---1/2 tsp• of fresh chopped garlic (or more if you have a cold)
Amounts of ingredients may be varied---it will all taste the same in the end!
One may add other veggies such as cabbage,carrots,etc•

Method
Boil the beets until tender(slices cook faster). Drain and set aside. Saute the onions in the oil or butter until transparent or until they smell good. Toss in the beets,sourcream , dill and salt and heat the whole dish through(should take a couple of minutes). Do this all on medium heat but if you are in a rush do it all on HIGH Heat and be very very attentive!
Serve with whatever else pleases you and enjoy!!!!
