Breaded Chicken Breast

Breaded Chicken Breast

Ingredients
Serves 4-8 (depending how much chicken you like)

4 chicken breasts (slice horizontally into 2 slices)
2 beaten eggs (season with salt and pepper)
approx• 1 cup of flour

Breadcrumb mix:
2 cups of fine breadcrumbs
2 tsp garlic powder
2 tsp onion powder
1/2 tsp ground black pepper
1 tsp paprika
1 tsp dried mixed herbs ( i use 'provence')
1/2 tsp ground nutmeg
A little olive oil for frying

Method
1. Dip the chicken breasts into the flour, making sure the chicken is completely coated. Shake off any excess flour.
2. Dip chicken into the beaten eggs then into the breadcrumb mixture. Gently pat the breadcrumbs onto the chicken to help it stick.
3. Pop them in the fridge for about 30 mins.
4. Fry in a little olive oil,over a medium heat, till golden and crispy.

I like to serve mine sliced, with a mixed salad and garlic salad dressing.:)

Gluten Free version! This is the best! This has become one of "my" signature dishes. So easy and so crowd pleasing! I use Gluten Free breadcrumbs (Lifestyle Bakery) and sprinkle in seasonings as Jamie suggests. I slice up the chicken first (so they turn out more like chicken fingers), dip them into gluten free flour, then egg, then pack on the GF breadcrumbs. I also use Rice Bran Oil to fry these in over medium-high heat. They are so crispy and so delish!

Thanks for the cornflake tip. Thought it might taste a bit weird but they were really quick and delicious!

tried this but with crushed cornflakes instead of breadcrumbs and used as dippers with sweet and sour sauce! TASTED AMAZING!!! goes well with mange tout as well:) thanks jamie!xx
