Breadless zucchini and turkey sandwich with water poached egg whites

Lean turkey steaks (Use chicken if you want) x 2
2 egg whites
Olive oil (Spray)
lemon and red pepper for garnish
Season the turkey and the zucchini with garlic pepper, salt, parsley and a drop of olive oil.
Pre - heat a grill and place the turkeys and the zucchinis.
zucchinis need 2 minutes on each side while the turkey only needs a minute on each.
Prepare your eggs by separating the egg whites from the yolk.
Mix the egg whites with salt, chopped coriander , pepper
Fill a pot with water, 3 inches deep and pour a tea spoon of balsamic vinegar.
Bring it to the boil and then turn down the heat
Pour your egg mixture and cook for 2 minutes
Season with salt and pepper to your liking
Plate up by arranging the zucchini and turkey in form of a sandwich
Vinegar in the water for the eggs helps the egg to retain its shape and not break away.
Do not put the eggs in boiling water since the bubbles break away the shape of the egg mixture.
