this makes a quick, delicious breakfast. can be served with salsa and sour cream if you wish. also yummy with bacon bits or grated cheese on top. serves 3, or 2 greedy people.
Ingredients
400 g spaetzle (either homemade or from a package)
1 shallot, minced
3 egg whites
2 whole eggs
chives, finely chopped
ramsons or basil, roughly chopped
salt and pepper
olive oil
Method
Heat olive oil on medium-high heat in a skillet.
Add shallots and cook until just tender and glassy.
Add the spaetzle and cook with the shallot, stirring every few seconds, for about three minutes.
In the meantime, whip together the egg whites and whole eggs with a fork until combined. Pour this over the spaetzle.
Cook like scrambled eggs until it has reached the level of doneness you prefer.
At the last minute, remove from heat and toss in the chives and ramsons/basil. Fold under to incorporate evenly.
Add salt and pepper to taste.

We have always made something similar, except that we make a sweet version. Fry the spaetzle in butter until they start going a bit brown, then add the beaten eggs. Cook until lthey are the they are the consistancy you like. Serve with jam. So yummy. Reminds me very much of my great grandma, as she is the one who introduced me to this recipe.
