My very own Singing chicken (Singapore/Malay style) 2 hrs shopping 15 mins prep 20 mins cooking 2 mins eating
Ingredients
Masala
1 tsp dry galangal
1 tsp dry lemon grass
1 tsp crushed dry kaffir (lime) leaves
2 tbs coriander seed
1 tbs cumin seed
1 piece mace or 1/4 tsp grated fresh nutmeg
1/2 tsp fennel seed
1/2 tsp whole black pepper
1/2 3 inch cinnamon stick
1 tbs rice
1/2 tsp black cardamom pods discarded (green is OK)
3 pc dried hot chillies
2 whole cloves
1 star anise
(dry roast allow to cool & grind in coffee grinder)
Then add
3 tbs turmeric powder

10 pieces of chicken, legs, thighs etc on bone
2 onions 1/8\\\'d
2 carrots chunked
6 potatoes 1/4\\\'d
4 big cloves garlic thin sliced
2 inch ginger thin sliced
6 green chillies sliced long ways and quarter
1 tbs garlic/ginger paste
Oil or butter (butter=Jamies fave)
1 can coconut cream/milk
500ml water or chicken stock (add more if needed)
Salt to taste
Method
Dissect the chicken if whole and surgically remove fat. (or use manual liposuction with a straw)
Heat oil in pan add onion fry for a few minutes add chillies, garlic, ginger and paste stir until aroma makes your eyes weep, add masala keep stirring, add chicken and brown the skin, add water/stock cook until chicken is tender (10-15mins) add coconut milk, don\\\'t boil. Serve with french bread or rice - or both.
