  • Serves 6
  • 1kg Brussels sprouts, trimmed
  • sea salt and freshly ground black pepper
  • olive oil
  • 2 sprigs of fresh rosemary, leaves picked
  • a few sprigs of fresh thyme, leaves picked
  • a few sprigs of fresh flat-leaf parsley, leaves picked
  • 1 sprig of fresh sage, leaves picked
  • 1 tablespoon unsalted capers
  • 80g dry breadcrumbs
  • 1 lemon
  • 100g any leftover cheese, such as Fontina, Cheddar or Parmesan
  • extra virgin olive oil
Preheat the oven to 180ºC/350ºF/gas 4. Halve the Brussels sprouts, then add to a large pan of boiling salted water. Reduce the heat to medium and cook for around 4 minutes, or until slightly tender. Use a slotted spoon to transfer to a 30cm x 25cm baking dish, then season with salt and pepper, drizzle over some olive oil and mix well, before spreading out into an even layer.

Finely chop the herb leaves and capers, then add to a large bowl with the breadcrumbs, the zest from the lemon and 2 tablespoons of olive oil. Coarsely grate or roughly chop and add the cheese, then stir to combine and sprinkle onto the sprouts in an even layer. Place in the hot oven for about 35 minutes, or until golden, then serve with a drizzle of extra virgin olive oil and a grating of Parmesan, if you like.
