Bulgur Salad

A simple and tasty salad with a spicy dressing....lovely served with grilled/barbecued meat or fish.

Ingredients
Makes approx• 3 portions (side dish)



1 cup of bulgur (cooked according to packet instructions)

about 8 baby vine tomatoes, deseeded and chopped

2 large spring onions, finely sliced

1 clove of garlic, crushed

1 bunch of flat leaf parsley, finely chopped

1 small bunch of fresh mint, finely chopped

1/2 cup of sultanas, soak for 30mins in warm water then drain

1/2 cup of toasted almond slivers



Dressing:



2 tbsps of olive oil

Juice of 1 small lemon

4 tbsp yoghurt

1 tbsp of harissa

2 tsps sun dried tomato paste

1/2 tsp ground coriander

Salt and black pepper to season

Method
1. Place all of the dressing ingredients in a large bowl and whisk together till creamy.
2. Add the salad ingredients to the dressing (except the bulgur and a few of the almonds ) and mix gently.
3. Add the cooked bulgur and toss to coat. Cover, then refrigerate for at least 30 mins to allow flavours to blend. Sprinkle with a few toasted almonds before serving.
