Serves 4-6.
Ingredients
100g finely chopped onion
50g finely chopped, fat-removed bacon (before fat is removed, about 75g rindless shortcut bacon)
5g butter (or 1 tsp olive oil)
pepper
¼ of a large cabbage (about 750g), shredded
¾ tsp dill (¼ tsp dried)
1 tb light sour cream
Method
• Put a large saucepan of salted water on to boil.
• In a saute pan, over medium heat, cook the onion and bacon in the butter with some pepper, stirring up occasionally, until softened, cooked and golden.
• Boil the cabbage in the salted water until as tender as you like to eat it (5-10 mins).
• Drain cabbage well, and mix it into onion mixture with dill and light sour cream.
