Calf with veggies,wrapped in a phyllo

its a complicate but very tasty dish

Ingredients
4 serves
800 grms calf meat cut in tiny pieces
1 onion peeled and chopped
2 cloves of garlic
100 grms peas
200 grms pieces (cubes) of eggplant
1 tomato sliced in tiny slices
8 tiny courgettes
salt, pepper,herbs(thyme ,oregano)
8 phyllos
1/2 cup of olive oil
150 grms smoked yellow cheese in slices

Method
First of all you have to marinade the meat in red wine ,with herbs, for a night in the fridge.Do not add salt cause will harden the meat.
In a pan, fry the eggplants with olive oil for 6 minutes, and place them in a dish that you have already put a paper, to absorb the oil from frying. In this way the food will not be \"heavy\", in taste ,and all the unnecessary fats will remain on the paper.
In another frying pan, place the onion, the sugar, the olive oil, and the herbs. Cook them in slow fire for 4 minutes, till the onion turn brownish. Now add the meat parts, without the liquids from the marinade. Turn the meat gently, from both sides, in order to take a gold color, from frying and after 5 minutes, add the tomato slices and 3 glasses of water. Let the food be cooked till the water be absorbed. After the liquids have been absorbed, try with a fork the meat and if it needs more cooking(if it still remains hard) to turn soft and smooth, add more water and cook it again.
When your meat is ready, add 1 glass of hot water, the salt , the pepper and the herbs. Now its the time to add the peas , the courgettes and the eggplant pieces. Cook the food till its sauce be thick and dense. This will take approximately 15 minutes in medium temperature.
Pull the food from the fire and let it cold.
Place a cooking paper in a baking pan and start laying phyllos. Your aim is to make \"packages\" that will contain meat parts and veggies inside.2 slices of meat,2 tiny courgettes, 2 pieces (cubes) of eggplant and a small portion of peas.
Pick up 2 phyllos and make a square with them.Use 2 phyllos for every package, in order to avoid the expelling of the sauce liquids, in the pan. Take with a spoon a portion of the food and place it in the center of the square. Fold the phyllo square and make a package(see in my blog page the pic).With a brush spread ,some olive oil in the upper part of the packages...this will give them a brownish attractive color when will be cooked.In every package add also 2 slices of smoked cheese and slices of garlic(as many as you wish...the taste of garlic is a kind of special and some people like it but others not). Bake the packages for 25 minutes in a medium fire.
Serve the packages with a Greek tomato salad and a white glass of wine.
