  • 8 oz of calves liver, trimmed & quartered
  • 2 oz butter
  • 4 sage leaves , roughly chopped
  • 2 to 3 dashes of balsamic vinegar (to taste)
  • Salt & black pepper
Heat the butter in a heavy based pan on a high heat until the butter starts to sizzle.

Add the liver to the pan and cook on a high heat for 2 minutes.

Turn the liver over, add the balsamic vinegar and cook for a futher minute or so.

Add the chopped sage, salt & black pepper and cook for a further minute or two (if you like your liver pinker or less pink, adjust the cooking time accordingly).

Serve with Pommes Anna and a green salad.

Method
