Calves Liver in Sage Butter

Quick, easy & scrummy

Ingredients
8 oz of calves liver, trimmed & quartered
2 oz butter
4 sage leaves , roughly chopped
2 to 3 dashes of balsamic vinegar (to taste)
Salt & black pepper

Method
Heat the butter in a heavy based pan on a high heat until the butter starts to sizzle.

Add the liver to the pan and cook on a high heat for 2 minutes.

Turn the liver over, add the balsamic vinegar and cook for a futher minute or so.

Add the chopped sage, salt & black pepper and cook for a further minute or two (if you like your liver pinker or less pink, adjust the cooking time accordingly).

Serve with Pommes Anna and a green salad.

i had liver and i had sage and i wondered why they wouldn't go well together. Found this recipe, tried it, and plan to forever after combine sage with liver (and onions). (Now, let's see if i can read the camned Captcha words to leave this praise)

Hi<br /> <br /> Followed your receipe then added fried onions, the best taste for calves liver we have ever tasted.<br /> <br /> We only eat calves liver because we prefer the taste and texture. If you have any more receipe's please send them. My husband said he could not expect better from a a la cart restuarant.<br /> <br /> Thankyou
