Ingredients
potatoes
onions
leftover bacon grease
salt & pepper to taste
Method
In a cast iron skillet over an open campfire (preferably in very fragrant woods like our Eucalyptus) add leftover bacon grease saved in a can from when you fried up bacon in this same skillet. Shred whole potatoes on large grater and add to grease. When they start to give up their liquid add sliced yellow onion (about same amount onion as potatoes) salt (very lightly because of salt in bacon grease) and freshly ground black pepper. Sit back and SMELL THE GOODNESS. Flip over when golden brown underneath and fry up top to same doneness. YUM!
