Caprese is my most ever favorite salad. Everything is just perfect about it. Every time I make it I get surprised once again by its beauty. Especially given that all I need to do is to slice tomatoes and mozzarella.
Ingredients
1 large or 2 small tasty tomatoes
150 g Mozzarella di Bufala
4 tbs pesto (To me it is worth making the fresh one and here is my favorite recipe• Or use your favorite ready made pesto)
handful of pine nuts
extra virgin olive oil
balzamic vinegar
salt
freshly ground black pepper
Method
Slice the tomatos and mozzarella around 8 mm thick.
Arrange them on the serving dish the way you prefer. I like the classic way when you alter the slices of tomatoes with mozzarella and arrange them in a semicircle.
Complement the salad by the pesto. I serve it in a separate sauce cup, but you can do whatever you like, e.g. spoon it over tomatos or pour onto the dish.
Sprinkle with pine nuts and drizzle with olive oil. Get a glass of nice white wine and enjoy.
