  • Nuggets:
  • 1 1/2 lbs. lean ground chicken breast
  • 1/2 small onion, pureed in food processor
  • 2 eggs
  • handful grated romano cheese
  • handful ground up whole wheat corn flakes
  • "breading":
  • shredded coconut
  • whole-wheat ground-up corn flakes
SO EASY:
mash together all of the "nugget" ingredients. Then form them into little nugget-pattys. Then toss them around in the "breading" mixture. Then bake them on a baking sheet with some non-stick olive oil spray (you can make this yourself with a spray bottle and some olive oil). Bake for 30 minutes on 350-degrees. Yummmmm.

Bake up a BIG batch and freeze them in zip-tight baggies. Perfect for quick kid friendly dinners that you can pop in the toaster.

Oh, you can also substitute sliced chicken breast for the ground chicken and shredded onions. But it tastes much better with the ground-chicken breast.

This idea came to me after watching Jamie demonstrate how America's chicken nuggets are actually made, to a group of children. It was disgusting...I knew that chicken nuggets were made from chicken "parts", but after observing the visual, i was totally grossed-out, and decided that i would NOT feed that to my children anymore. So i thought about how yummy coconut shrimp is, and i combined that with my baked chicken meatball recipe, and here it is. My kids love them, i hope yours do too. Cara Martin, Massapequa, NY, USA.
