Caribbean Bread with a delicious extra

Bread the size of flat scones is fried in a large frying pan/wok. This recipe was given without the peppers at Knowle Hill Steam Rally 16 years ago. I do not claim the original recipe.

Ingredients
Flour quantity suitable for your guests and yourself
Salt large pinch
Oil to replace lard
Chopped remainder Yellow Pepper
Cold water to suit

Method
Take a mixing bowl and pour in an amount of flour to cater for the number eating.
Add a good pinch of salt. Distribute throughout the flour.
Pour a tablespoon of olive oil/vegetable oil into the flour enough to replace your usual lard and mix it so that it only starts to form clumps.
Add chopped yellow pepper mixing before the water is added. Pat the palm sized paties and place on the wok to shallow fry with a normal amount of oil. Turn several times and press down the breads which try to rise on the pan.

I only used the new ingredient of pepper for the first time today and it was so good I had to tell Jaimie and his friends. Well done on behalf of the school children. Congratulations to your increased family with Baby Buddy.
