This is my mother in laws meatloaf recipe. It probably came originally from a supermarket recipe card back in the 80\'s. All the households in our family make this regularly & have made adjustments over the years. My own preference is to add grated veg - they just dissapear into the mix which is exellent if you have fussy kids ( or husbands) This makes 1 HUGE loaf or 2 medium loaves - leftovers are fantastic on sandwiches with extra sauce. You might want a double batch of the sauce.
Ingredients
1kg beef mince.
500gm sausage mince
1 cup bread crumbs
1 onion finely diced
handful of freshly chopped parsley
1 egg
2 tbls curry powder (keens)
1/2 cup milk
1/2 cup water
SAUCE
1/2 cup water
1/2 cup tomato sauce
1/2 cup worcestorshire
1/4 cup brown sugar
1 tsp instant coffee (or coffee granules)
2 tbls vinegar
20gm butter
2 tbls lemon juice
Method
Mix all the loaf ingredients together.
Place into a large deep lightly greased casserole.
Bake for 1 hour at 180 degrees C
Heat all sauce ingredients in a saucepan, stirring until sugar is dissolved.
Remove loaf from oven, TIP OFF ALL FAT.
When sauce boils pour over loaf
Return to oven for 20 minutes.
Serve with mashed potato & steamed green veg.
FRIZZY OPTIONS :
Grate the onion
Add grated carrot & zucchini - omit water
Omit lemon juice & butter
