Mashed Carrots make a wonderful meal in their own right, but or if you’re a little low you could always mix in a few potatoes, such as this recipe.The yougurt works a real treat you can use full or low fat yougurt.
Ingredients
8 Potatoes
5/8 Carrots
1 Cup of yogurt
1 Cup of single cream
2 Tablespoon of milk
1 Tablespoon of Butter
2 Tablespoons of English Mustard
Salt & pepper for seasoning
Method
Peel the vegetables, dice and add to a pan of boiling hot water.Once all the vegetables are cook,drain and add to a large bowl.Add 1 cup of yogurt and 1 cup of single cream along with 2 Tablespoon of milk.Mix all the Ingredients really well.Make sure you have no lumps of the carrots or potatoes.Add 2 Tablespoons of English Mustard and mix really well and the final touch add salt and seasoning.
