Carrot muffins

Carrot muffins

I think, everybody knows Rüblikuchen or carrot cake. Try those muffins, they are tasty, moist, and a real treat. :o)

Ingredients
150g plain wheat flour
100g whole spelt flour
60g ground almonds
2 tsp baking powder
1/2 tsp baking soda
1 pinch of salt
1 egg, gently beaten
300g plain yoghurt
120g muscovado (or other brown) sugar
80ml rape seed (or other vegetable) oil
150g carrots, grated
1/4 tsp ground nutmeg
1/4 tsp ground cloves
1/2 tsp cinnamon
zest of one lemon
2 tbsp lemon juice
80g icing sugar
some orange juice
(makes 12 muffins)

Method
Preheat your oven to 180° C.
Mix flours, almonds, baking agents, and salt in one bowl.
Mix egg, yoghurt, sugar, oil, carrots, spices, lemon zest and juice in another bowl.
Stir in the flour mixture bit by bit.
Put some paper cups into the muffin pan and fill in the batter.
Put in the oven for 20-25 min and take out then.
Let the muffins cool down.
Mix the icing sugar and some orange juice. Put on top of the muffins. If you have any, you could put some marzipan carrots on top.
