Carrot soup

Carrot soup

This is an easy to make and deliciously thick carrot soup. And healthy...no cream, but tastes creamy because it is a thick soup.

Ingredients
8 large carrots, preferably organic
2 big onions
1 cup cooked rice
4 celery sticks
1 litre chicken stock
salt and pepper
1/2 tsp curry powder

Method
Chop all vegetables and place in large pot with the cooked rice, chicken stock and curry powder. Simmer for 15 minutes or until carrots are tender. Blend with a hand held blender or in a blender or food processor. Add salt and pepper to taste.

Delicious soup, changed ingredients slightly used paprika instead of curry powder and taste was amazing.

try with orange juice instead of chicken stock - fresh and tastey

Add curry powder, salt and pepper to taste. Best to use organic carrots for good flavour. This dish is about the flavour of carrots.

Very bland has no real taste. Is more like a puree than a soup.

Disappointed.

recipe sounds quite different and as I grow carrots will certainly be tried
