  • 1 cup of unsalted cashews ( soaked for 4 hours)
  • 4 spring onions (the white part) chopped
  • 1 clove of garlic
  • 1/2 red pepper, chopped
  • 3 tbsp nutritional yeast
  • 2 tbsp olive oil
  • 1 red chilli (not too hot)
  • 1/2 tsp onion powder
  • 1/2 tsp smoked paprika
  • about 1/2 to 3/4 cup of water
  • about 1/2 tsp of salt
1.Rinse and drain the cashews.
2.Using a high speed blender, blend all of the ingredients adding the water bit by bit, till you have a very smooth sauce (it can take a a few minutes depending on your blender). The mixture will stick to the blender walls at the start, so occassionally stop the blender and scrape the mixture down towards the blades.
3.Taste for seasoning then pop it in the fridge for about 45mins to allow flavours to blend.

I put this recipe up a while back and have been working on improving it ever since ...i've increased the soaking time from 2 to 4 hours (makes it creamier) and i've changed the flavourings a little too.

Method


1.Rinse and drain the cashews.
