Celery Soup

Celery Soup

I made this by \'accident\' using what was left in the drawer at the bottom of my fridge! Turned out quite delicious

Ingredients
1 large onion
1 large Carrot
1 large leek
2 oz butter
two celery hearts
Organic dried stock powder dissolved in hot water•
celery seeds
Salt and freshly ground black pepper
grated cheese

Method
Chop up the onion, carrot, leek and celery hearts and place in large saucepan and sweat with melted butter for about 12/15 minutes but dont allow them to colour too much.

Add enough stock to cover (to taste) roughly 2 pints bring to boil then simmer until celery is soft - about 20 minutes or so. Add the celery seeds salt and pepper to taste.

Then blitz.

Top with grated cheese and serve
