Ingredients
250 s mascarpone
2 eggs yolk
4 tbsp caster sugar
3 tbsp melted unsalted butter
200g sweet biscuits
For fuits:
2 apricot
1 nectarine
50 ml cognac
1 tbsp brown sugar
Method
Broken biscuit and mixed with melted unsalted butter.
Mixed with food procesor eggs yolk with caster sugar till is duble size, then add mascarpone cheese. Continuous to mixed. Taste and if you want add more sugar.
Seated one layer of biscuit, then macarpone cream and cover with another biscuit layer. Let on fridge aboute 30 minutes.
Sliced cut fruits in little pieces , mixed with brown sugar, put on paper baking , add cognac, close the paper and add on oven at 200\'C aboute 10 minutes.
Open paper baking and add on top to the cheese cake and serve.
