Cheese-Crusted Fish

This is a really simple dish. It\\\'s pretty much fish baked with bread crumbs and cheese, what could be simpler that that? Its also really astounding, great texture, and well matched flavours.

Ingredients
-4 pitta breads
-a couple of slices of your favourite cheese
-a few sprigs of parsley
-generic white fish
-olive oil

Method
1) Blend the pitta breads, the cheese and the parsley in a food processor, until all the pieces are size of pin heads.
2) Place the fish in a large casserole dish, and add a drizzle of olive oil
3) Cover the fish in the pitta-cheese mix.
4) Bake in the oven for 20-30 minutes, at 150 degrees celsius, or until the pitta-cheese mix is crispy.
5) Serve.
