Cheesy Popovers

Mix all your dry ingredients and then add milk .. stir until completely mixed (somewhat like pancake batter) add eggs one at a time.. do not over beat. it will have a little lumpy texture.. pre heat oven to 450 degrees F lightly grease muffin tin and lightly flour cover bottom of each muffin tin with batter then add cheese and chopped sundried tomatos and rosemary and ham (optional) The add more batter. (just under the rim.. do not overfill.

Ingredients
1 cup of sifted all- purpose flour
1/2 tsp of salt
1 cup of milk
2 eggs
half a cup of grated cheese
1/4 cup of chopped Sundried Tomatos
1 tsp of Rosemary
Ham sliced and diced (approx 3 slices) ham is optional


Method
Bake at 450 for 15 minutes and then without peeking, turn oven down to 350 for another 10-12 min. Each oven will vary..

Once they are done simply remove and cool on a open tray.. Eat while warm. with a bit of butter.



There are many variations of this where you can add sweets for a dessert version and serve warm with custard. Some suggestions would be with apricot jam and cinnamon. and Almonds on top sprinkled with more cinnamon or vanilla sugar (powered).
